Salmon Sandwich

with Garlic Mash

Ingredients for Salmon Sandwich

  • 1lb salmon
  • 1/8 cup soy sauce
  • 1/8 cup olive oil
  • ¼ of a lemon’s juice
  • ¼ cup of red onion
  • 2 cloves of garlic
  • 2 tablespoons of dejon mustard
  • 1 sour dough loaf
  • 3-4 slices of munster cheese
  • Handful of watercress
  • Salt and pepper

Ingredients for garlic mashed potatoes

  • 5 rustic potatoes
  • 4 tablespoons of butter
  • 2 tablespoons of chives
  • 2 tablespoons of rosemary
  • 2 cloves of garlic
  • 1 tablespoon of sour cream
  • 1 tablespoon of cream cheese
  • ¼ cup of half and half
  • Garlic salt and pepper

Ingredients for mashed avocado

  • 1ripe avocado
  • 1 clove of garlic
  • 1 tablespoon of lemon juice
  • Salt and pepper

Ingredients for caramelized tomatoes and onions 

  • ½ red onion
  • ¼ large tomato
  • 2 tablespoons of balsamic vinegar
  • 1 tablespoon of white sugar
  • 2 tablespoons of lemon juice
  • 2-3 tablespoons of olive oil
  • Dash of red pepper flakes
  • Salt and pepper


  • Add soy sauce, olive oil, lemon juice, red onion, garlic, salt and pepper to salmon and marinade for 30 mins - 1 hr in the refrigerator.
  • Place 5 potatoes in the oven at 400 degrees for 1.5 hours or until soft.
  • In a pan add chopped garlic, chives, rosemary and 2 tablespoons of butter and melt until garlic is fragrant. Remove potatoes from the oven, trim off ends and remove skin. Place potatoes into the buttered pan and mash with a fork. Add sour cream, cream cheese, half and half, 2 tablespoons of butter, garlic salt and pepper.
  • Peel avocado, add garlic, lemon, salt and pepper. Mash until well mixed. Set aside.
  • Slice red onion, add to a pan with olive oil and salt. Cover and cook on medium heat for 15 minutes stirring frequently. Once soft, add tomatoes, balsamic, sugar, lemon juice, red pepper flakes, salt and pepper. Cook another 10-15 mins or until the consistency of a chutney.
  • Remove most of the liquid from the salmon marinade and cook the salmon stove top on medium to high heat, skin down. Cook for 5 minutes and flip. Remove skin from salmon fillet. Salt and pepper salmon once skin is removed. Cook another 5 minutes. Cut salmon in half to make sure it is cooked through.


Sandwich assembly:

  • Cut sourdough bread in half, brush with olive oil on both sides and place in oven at 400 degrees for 3-4 minutes to toast. Add Munster cheese, Dejon mustard, caramelized tomatoes and onions, mashed avocado, watercress and salmon. Serve with garlic mash on the side.
